All aspects of these wellness initiatives will be adopted and promoted throughout the culinary and stewarding operations.
Responsibilities
In this role, I will assist and assume responsibility for the efficient operation of the Culinary department to provide exceptional products and services within brand operating standards. I will ensure that all set policies, procedures and best practices are in place and rigorously enforced.
I will perform the following relevant tasks for this role:
As Sous Chef, I will support the Chef de Cuisine and Executive Chef in the overall management and smooth operation of the culinary team.
I will ensure all food preparation and presentation are aligned with brand standards, recipes, quality expectations and hygiene regulations.
I will supervise and support the culinary hosts in the preparation, cooking and presentation of all dishes, ensuring consistency and excellence at all times.
I will assist in creating seasonal menus and innovative culinary concepts that reflect the Eat With Six Senses philosophy, focusing on sustainability, local produce and wellness.
I will ensure proper handling, storage and rotation of all food products in accordance with HACCP standards and local health regulations.
I will monitor food quality, portion control and waste management to maximize profitability while maintaining the highest standards.
I will support inventory management, stock control and purchasing processes to ensure operational efficiency and cost control.
I will work closely with Stewarding and other departments to maintain cleanliness, organization and safety within all kitchen areas.
I will maintain guest experience as a focal point, ensuring special dietary requirements, allergies and guest preferences are handled with care and attention.
I will assist in training, developing and motivating the culinary hosts, promoting teamwork and a positive working environment.
I will ensure all equipment is properly used and maintained, reporting any maintenance requirements promptly.
In this role, I will handle any guest feedback, complaints or suggestions related to culinary experiences promptly and professionally, ensuring appropriate follow-up and resolution.
I will perform any additional tasks given by the Chef de Cuisine and/or Executive Chef or above in the organization.
Qualifications
To execute this position, I have the required qualifications, technical skills and experience in a similar or greater role in luxury hotels or high-end restaurants with proven results.
I possess a minimum culinary diploma or degree from a recognized culinary institution and more than three years’ experience in a similar culinary operational role.
I have strong knowledge of international cuisine, modern culinary techniques and wellness-focused gastronomy.
Technical skills include knowledge of kitchen operations, food cost control, inventory systems and HACCP procedures.
I am familiar with sustainable culinary practices, local sourcing and farm-to-table concepts.
I have an excellent command of written and spoken English and Spanish.
I will maintain a thorough understanding of Six Senses in terms of guidelines, rules and regulations, brand and operating standards, facilities and services.
